Can we track reimbursements from multiple customers?

The terminology might be different here. If you get a reimbursement you normally do not track this unless it's on your settlement and still it's only for balancing out your settlements.

From your settlement if you are tracking reimbursements then you can create custom sub-categories for each customer if you decided to do so. Please note that this will not change any of your tax report since reimbursements are not taxable.
