Found a used truck forsale at a dealer oil looks like it was just changed. Would an oil sample tell of any problems with new oil and filters?

If the dealer has changed the oil, like most of them do, then an oil sample will not do you much good.
The reason for sampling oil on a truck you might buy is: looking for fuel dilution, presence of glycol (coolant), and wear metals. All of those things would have been drained out with the old oil and the engine has not been run enough to detect any of those things in the new oil.
